By default iPhones backup all of your data and photos. If this is something that you dont want then turn off this feature and keep your data private. Information on how to turn off the iPhone backup can be found here.
Also, turn off the iPhone stream, to stop all of your photos from being copied. Information on how to do this can be found here.
